I understand about the crop factor for smaller sensors but I'd like to know if there is an advantage to using one mount type lens over the other if you have an APS-C camera. I read that the EF-S lenses are "optimized" for cropped sensor cameras but what does this mean exactly? Are they faster, sharper, or have less lens distortion than an EF lens of the same focal length?

When Canon introduced their auto focus 35mm film cameras in 1988 they abandoned their "FD/FL" lens mount in favor of the "EF" lens mount. When they introduced their first DSLR cameras with a cropped sensor they also introduced the lower-cost "EF-S" lenses which were aimed at the beginner market. Unfortunately, the "EF-S" lenses protrude farther into the camera body which is fine on a cropped sensor camera but makes then unusable on a Canon full-frame DSLR like the 6D or 5D or 1D. An "EF" lens can be used on any Canon DSLR. As others have noted, an "EF" lens has a larger image circle to fully cover the 24mm x 36mm full-frame sensor so when used on a cropped sensor only the center part of the image circle is used. Since the "EF" lenses are aimed at professional photographers or advanced amateurs the overall build quality is better as are the elements that make up the lens. If you look at the entire Canon lens line you'll see only one really high-quality "EF-S" lens - the 17-55mm f2.8 constant aperture zoom.
Nikon, unlike Canon, has used the same lens mount - the "F" mount - since 1959. As the transition from 35nn film to digital began, Nikon also introduced a budget lens line designated "DX" to indicate they were specifically designed for cropped sensor DSLR cameras. Their professional/advanced amateur lenses are designated "FX" to indicate they are designed for full-frame DSLR cameras. An "FX" lens can, of course, be used on any Nikon DSLR with the same advantages of using a Canon full-frame lens on a cropped sensor camera.
However, unlike Canon, Nikon designed their "DX" lenses so that they can be used on a full-frame Nikon DSLR. All the user of a Nikon full-frame camera has to do is go into a menu and choose "DX" lens and the camera automatically crops the full-frame sensor to the same size as a Nikon cropped sensor. Yes, some of the resolution you paid for when you bought the full-frame DSLR is lost but at least you can use all the "DX" lenses you bought for your cropped sensor Nikon. Someone who started with a cropped sensor Canon DSLR and added 2 or 3 "EF-S" lenses is faced with the expense of replacing those lenses should they ever upgrade to a Canon full-frame DSLR.

What would be a good DSLR camera for nature photography?

I have been using compact cameras for a couple years and I want to step it up a notch. What would be a good DSLR camera to look into for nature photography? I need something that snaps fast. Someone mentioned something along the canon rebel line but I don't know. Also, should I consider a camera with Full Frame capabilities or is that just a little overboard? Thanks!

You really want a crop sensor for wildlife. The crop brings the animal in closer, effectively increasing focal length.
I shoot Nikon, so my recommendations would be the D90 or D300s. It depends on budget, the D90 is around 750.00, and the D300s around 1500.00. They both have same sensor, the D300s has a higher frame rate and more metal in the body.
The lenses are the part where you need to spend the extra money. You need a 300mm lens at a minimum for wildlife, and an 11 or 12mm (cropped frame) at the wide end for scenic shots. Tokina lenses are really good glass, and a lot cheaper. Look for the 12-24 or the 11-16 for wide angle. For telephoto the 100-300 F4 is really good. They also make a really good 28-80mm 2.8 to look at.
The best approach would be to buy a D90, and have extra money for good glass.
Both of these shots were with the D300, the D90 has a slightly better sensor.
